Peanut Brittle1 1/2 c sugar
1 c water
1 c light corn syrup
3 T butter or margarine
1 pound shelled peanuts -unroasted if possible-
Combine in small dish and set aside-
1 1/2 t baking soda
1 t water
1 t vanilla
Instead of using 2- 15 1/2 in. x 12 in. warm buttered baking sheets, spread a BIG sheet of heavy duty foil in a flat surface -table- and spray with butter-flavored non-stick cooking spray.
Combine sugar, water and corn syrup in large saucepan. Cook over medium heat stirring occasionally, to 240° on candy thermometer -soft ball stage-.
Stir in butter and peanuts. Cook stirring constantly to 300° -hard crack stage-. Watch carefully so it doesn't burn. -Hint- real butter will get darker than margarine-
Immediately remove from heat, stir in soda mixture thoroughly. It will foam and bubble and start looking right at this stage. Pour mixture onto foil -or evenly onto 2 sheets- and quickly spread 1/4 in. thick -as thin as possible-. Cool, break into pieces.
Yields 2 lbs.
